A cuisine of creation and emotion

Chef Emmanuel Renaut is madly in love with his Alpine region that is the source of his inspiration. Be it the mountain peaks where rose hip, wild blackberries and gentian bloom, the woods and forests where ceps and chanterelles hide, or the fertile plains extending as far as Lake Geneva, home to whitefish and arctic char, the Alps are a colourful market brought to life by their passionate artisans.

From this encounter between the force of nature and the savoir-faire of men and women has emerged a cuisine of authentic flavours.

Without ostentation, like the place itself, the trademark of 3 Michelin-starred chef and Meilleur Ouvrier de France, Emmanuel Renaut is to cut out the superfluous and go straight to the essential, such as the delicacy of a pike and monkfish biscuit or the tenderness of a fillet of venison. The chef takes his guests on an imaginary stroll through Leutaz or on a mountain hike, where the flavours and aromas reveal the incredible aromatic palette of the Haute-Savoie region.

The Flacons of Flocons

Majestic, full of hand-picked favourites and wonderful discoveries, but above all eclectic, the Flocons de Sel cellar houses nearly 1,200 wines from across France and wherever else winegrowers work with passion and dedication. While the great Domaines and esteemed labels of Petrus, Angelus and Romanée Conti are all there, so too are the wines of Savoie that form the cornerstone of a menu anchored in its terroir. 

With its red, white and even sparkling wines, Savoie will have you savouring every hue and colour, from the extraordinary old vintages of Michel Grisard to Apremont, Roussette and Chignin-Bergeron. The region reveals its many grape varieties - including its oldest with Gringet or Persan - in a delicate palette which allows diners to rediscover the superb potential of the Savoyard vineyard.

The Flocons de Sel cellar also houses an extraordinary collection of Chartreuses: guilty pleasure of Chef Emmanuel Renaut. It includes bottles dating from before 1900; green and yellow varieties; the Chartreuse Cuvée MOF; Episcopale; Anisette and the "queen of liqueurs", an extremely special 43° yellow cuvée with a production run of only 1,440 bottles a year. A little treasure that will be truly appreciated by those in the know.
