Emmanuel RENAUT, 'Meilleur Ouvrier de France' and 'Compagnon du Tour de France' was awarded his third Michelin star in 2012. He was trained in Paris and started his career in the restaurant of the Crillon hotel working under Christian Constant, alongside people such as Yves Camdeborde and Eric Frechon. He then went to Marc Veyrat at L'Auberge de L'Eridan where he was assistant chef for seven years. During this period he also spent some time with Chef Yves Thuriès. After a period in London, where he ran the kitchens at Claridge's, he returned to the mountains 15 years ago and settled in Megève where he set up his own restaurant the ‘Flocons de sel’. With the opening of the Flocons de Sel at a new site in 2008 he was able to offer a range of new services for his guests with the addition of a hotel and on the slopes above Megève and transform the old restaurant into the 'Flocons Village' bistro.
In Megève, Chef Emmanuel Renaut serves a cuisine in his own image: delicious, lively, brightly coloured, engaging and up to date.
As Pierre Margara, another artist from Megève, puts it:
‘His cuisine is both highly flavoured and delicate at the same time, just like our mountains - there are gently rolling hills and then the glorious surprise of a soaring peak’.
In his search for the finest possible ingredients, Emmanuel Renaut seeks out his suppliers from the elderly home distiller to the lake fisherman, from the cellars of the cheesemaker in Beaufort to the baker’s shop. From the bee-keeper in love with his bees to the wine grower from her native region of the Valais. All this so that he can introduce you to a particular savoir faire, to local traditions and a certain art of living through his cooking.
Come and spend the morning with the kitchen team, find out the secrets of preparing for a three star Michelin service and try your hand at making gnocchi or working with shelfish. This part lasts from from 9am to 1pm. After that you will taste your creations during a light lunch with a glass of wine. This experience is for a maximum of two people.

Theme-based cookery classes
Our Chef Emmanuel Renaut offers theme-based cookery classes on Thursdays, Fridays and/or Saturdays, from 4pm to 6.30pm. Two or three recipes are introduced and prepared during each class. The themes for these sessions can be suggested by participants when they make their reservation.
The chosen recipes have been adapted so that they can be prepared in an ordinary kitchen.

Each class is from 16:00 to 18:30pm. The price is 60€ per person (reservations are essential, a minimum of 4 people are required for a class to run).
Each class lasts for approximately 2 hours.
You will learn 2 to 3 recipes in each class.

Join the kitchen team at the ‘Flocons de Sel’ for a day, find out what it's like behind the scenes in a gastronomique restaurant and appreciate the excitement of a lunch service.
Arrive at approximately 9am, spend the morning in the kitchens helping prepare the dishes for the lunch service. Either enjoy your lunch in the kitchens so that you can watch the dishes being sent out or in the dining room. You may remain for the afternoon to prepare dinner should you wish to do so.
Rate: € 200 per person (max. 2 people)

In his restaurant on an alpine mountain-side, Chef Emmanuel Renaut serves dishes of creative subtlety, which are superb matches for the rich nectars to be found on the hotel’s extensive wine list.
Our gastronomic restaurant is closed every Tuesday and Wednesday except in July and August. This summer, we have the pleasure of announcing that the gastronomic restaurant will be open on the following dates: Tuesday the 9th, 16th, 23rd and 30th of July; Tuesday the 6th, 23th and 20th of August and Wednesday the 14th of August 2013.
Our ‘Flocons Village’ bistro, in Megève town centre, serves simple, tasty, regional cuisine. Its ‘Alpine restaurant’ ambiance is both elegant and relaxed. Our two set menus are based on an à la carte menu which changes regularly. This means you can compose your own set menu: the 27€ menu includes a starter and a main course or a main course and a dessert. The 31€ menu includes a starter, main course and choice of dessert.
There is also a single main course for € 20 or a dish of the day for € 19.
Our bistro is open daily for lunch and dinner.
